Your guidance seems focused on the rootfs and kernel provided (understandable) to the exclusion of all else (not so much). What about updates (esp. security) and packages I add? What sources should not change? I assume that I can check /ect/apt/sources.list... well, here it is,

Along the same line, once I do over, what will my available sources be?
What if I need to add another source - can I? Without breaking things of course.
The 'ports' for ARM7 in particular are what I will need to look for and add correct?
If the packages I want / need haven't been ported I will need to find an alternative (build from source) correct?
I don't have any real experience with building from sources, but may be forced to do that. I am trying to avoid this because it is another learning and time hurdle and creates a number of other issues in my case.
