as I know , uboot could try to add "single" at uboot parmenter, I not give a try , if you wanted you could follow below procedure to do
for example
your u-boot like "bootarg=...root=/dev/sda1 single..." than your rootfs will has administator right
after boot up you could modify your sudor file at /etc folder to add your account and password
finish above procedure , you could back to normal boot-up( mean not used singe parameter at u-boot)
