I recently obtained my sheevaplug and I've been playing with it for a few days now, handled the SSH (windows) and stuff. At a website I saw a movie of a sheeva plug showing the actual ubuntu login screen instead of the bash command lines. I've been trying for hours and I really don't understand how to get it to work? Can anyone help me out here?

I believe you saw a demonstration of a displaylink based monitor attached, via USB, to the plug. Do a search on these forums for displaylink and you should get a few threads that talk about the hardware and steps needed to do this.

FYI - you can have a graphical environment on the sheevaplug by using VNC too. I set up tightvncserver and the full gnome-desktop-environment on mine, and use gvncviewer from other machines to access it.
